Polyglycerol-3 polyricinolate (" PGPR ") is a food additive used to maintain high moisture, stable content and as a viscosity regulator in emulsions of oil and water systems. In the chocolate industry, PGPR is used because it leads to a significant reduction in the yield stress of molten chocolate. This allows the chocolate to be moulded without any air bubbles and more easily coated with granular ingredients, while the thickness of the chocolate coating can be optimally adjusted.
