  Sodium Bicarbonate, commonly known as baking soda, has the chemical formula NaHCO₃.
The chemical formula is NaHCO₃ and the molecular weight is 84.01. It is a kind of white fine crystal, and its solubility in water is smaller than that of sodium carbonate.
Sodium Bicarbonate is easily decomposed by heat and starts to decompose at about 50°C to produce sodium carbonate, water and carbon dioxide with the chemical formula 2NaHCO₃ \stackrel{\Delta}{=\! =\\! =} Na₂CO₃ + H₂O + CO₂↑. This property allows it to be used as a bulking agent in baked goods, where the production of carbon dioxide causes the food to expand and loosen.
Sodium Bicarbonate reacts with acids, such as hydrochloric acid with the chemical equation NaHCO₃ + HCl = NaCl + H₂O + CO₂↑, and can therefore be used as a stomach acid neutralizer to alleviate the discomfort caused by excess stomach acid.

Function:

Medical field: It can be used to treat metabolic acidosis; alkalize urine, used to prevent certain drugs (such as sulfonamides) from crystallizing in the urine; it can also be used in oral care products to neutralize the acidic environment of the oral cavity.

Food industry: As mentioned above, it is used as a bulking agent to make baked goods such as bread and cookies, and it is also used to produce carbon dioxide bubbles in drinks such as sodas to enhance the taste.
