What is Sodium Polyacrylate ?

Sodium polyacrylate, with the chemical formula (C3H3NaO2)n, is a new type of functional polymer material and important chemical product. The solid product is a white or light yellow block or powder, and the liquid product is a colorless or light yellow viscous liquid. It is obtained from acrylic  a/cid and its esters as raw materials through aqueous solution polymerization. It is odorless, soluble in sodium hydr /oxide aqueous solution, and precipitates in calcium hydroxide, magnesium hydroxide and other aqueous solutions. It is often used as water treatment agent, salt water refining and latex thickening. It can also be used as food thickening and emulsification.

Function:
1. It has the following effects in food:
(1) Enhance the protein binding force in raw flour.
(2) The starch particles are combined with each other to disperse and penetrate into the protein network structure.
(3) Form a dense dough with a smooth and shiny surface.
(4) Form a stable dough gel to prevent soluble starch from exuding.
(5) The water retention is strong, so that the moisture is evenly maintained in the dough to prevent drying.
(6) Improve the ductility of the dough.
(7) Stably disperse the fats and oils in the raw materials into the dough.

2. As an electrolyte interacts with protein, it changes the structure of protein, enhances the viscoelasticity of food, and improves tissue.
3. Because it dissolves slowly in water, it can be mixed with sugar, powdered starch syrup, emulsifier, etc. in advance to increase the dissolution speed.
4.Used as a clarifying agent (polymer coagulant) for sugar liquid, salt water, beverages, etc.
