Vitamin B6 is also known as "anti-dermatitis vitamin". It is one of the B vitamins. It belongs to pyridine derivatives and includes pyridoxine, pyridoxal, and pyridoxamine as three compounds. These compounds exist in food in forms that can be mutually converted. However, vitamin B6 in plants is mostly pyridoxine, while in humans and animals, it is mostly pyridoxal and pyridoxamine. Human intestinal bacteria can also synthesize pyridoxine. In the human body, pyridoxine can be converted into pyridoxal and pyridoxamine, and the latter two cannot be converted back into pyridoxine. The three have the same physiological activity. Vitamin B6 is rapidly converted into pyridoxal phosphate in the human body. This compound plays an important role in amino acid metabolism and is a coenzyme for decarboxylase, transaminase, hippurate oxidase, deaminase, and desulfurization hydration enzyme. It is also a necessary coenzyme for carbohydrate and fat metabolism, activities of the central nervous system, and the formation of hemoglobin. Vitamin B6 is widely present in nature. Egg yolks, fish, meat, seeds, grains (germ), and other foods have relatively high contents. Generally, dietary intake is not likely to be deficient in this vitamin. When there is a deficiency of vitamin B6, symptoms such as dermatitis, convulsions, and anemia may occur. Vitamin B6 is mainly used in pregnancy, radiation sickness, and vomiting caused by anti-cancer drugs, vitamin B6 deficiency syndrome, seborrheic dermatitis, cheilitis, angular stomatitis, and acute and chronic eczema, etc. It can also be used in food fortifiers, feed additives, and cosmetics.
