Chemical property

Colorless needle-like or small leaf-like crystals in monoclinic crystal system, with a sour taste like that of fruits. Soluble in water, ether and acetic acid, insoluble in ethanol, and almost insoluble in chloroform.

Purpose

Used as a mordant. It is used for manufacturing unsaturated polyester resins, pesticides, acid flavoring agents and amino acids, etc. As an acidulant, it is mostly used in combination with citric acid. It can be applied to fresh dough products and fruit juice beverages, with a maximum usage of 0.6g/kg; it can also be used in carbonated beverages, with a maximum usage of 0.3g/kg.
