Mushroom chitosan is a natural polysaccharide compound extracted from fungi (such as mushrooms) and is a variant of chitosan. 1. Source and Extraction:

1) Source: Traditional chitosan is usually extracted from the shells of crustaceans (shrimp, crab, etc.), while mushroom chitosan comes from the cell walls of fungi, especially large fungi such as mushrooms. The main component of fungal cell walls is chitin, which is converted into chitosan after deacetylation.

2) Extraction Method: Remove proteins and other impurities in fungal cell walls by chemical or enzymatic methods, retain chitin, and then convert it into chitosan through deacetylation.

2. Chemical Properties:

- The structure is similar to that of crustacean chitosan, consisting of β-(1→4)-linked D-glucosamine and N-acetyl-D-glucosamine.

- The degree of deacetylation (DD value) determines its biological activity, usually between 70% and 95%. A high degree of deacetylation may enhance antibacterial and adsorption properties.
