    Lactose is a disaccharide naturally found in the milk of mammals. Secreted by the mammary glands of mammals, it exists only in the animal kingdom. Its molecular formula is C12H22O11. It is a disaccharide composed of glucose and galactose, formed by the dehydration of the hydroxyl group on the fourth carbon atom of glucose and the β-hemiacetal hydroxyl group on the first carbon atom of galactose, thus retaining the reducing property of the aldehyde group on the glucose molecule. It has two isomers: α-lactose and β-lactose. α-lactose, which crystallizes from the mother liquor below 93.5℃, contains one molecule of water of crystallization, has a melting point of 202℃, a specific rotation of +88°, and a solubility of 7.4 g. β-lactose, which crystallizes above 93.5℃, has a melting point of 252℃, a specific rotation of +34°, a solubility of 55 g, and no water of crystallization. α-lactose has low hygroscopicity and does not absorb moisture from the environment in high humidity, which is extremely important for controlling water activity in food. In dehydrated milk and whey products, lactose often exists as amorphous crystals. It is highly hygroscopic, with a solubility of 20 grams (at room temperature). Its sweetness is only 30% that of sucrose, making it unsuitable as a sweetener. It is only used in the production of low-sweetness or special-flavor foods. Liquid whey contains approximately 6.5% lactose. After deesterification and clarification, it is concentrated at 55–60°C to solidify it, increasing the content to 55–65%. Cooling yields a large amount of crystals. Removing the mother liquor and washing the crystals produces slightly yellow edible lactose with a purity of up to 99.6%. Further recrystallization produces high-purity medical-grade lactose. Human milk and cow's milk contain 5–7% and 4% lactose, respectively. Lactose is commonly used in infant formula and is also widely used in the food industry in beverages, Western-style sausages, sauces, instant foods, spice mixtures, and meat products to supplement low sweetness, enhance aroma, extend shelf life, and increase product value. It can also be made into other derivatives (such as heterologous emulsified sugar) for processing different foods, and is also commonly used in the preparation of tablets.

    Storage Conditions:

    Mold growth may occur under humid conditions (80% RH and above). Lactose may develop a brown coloration on storage, the reaction being accelerated by warm, damp conditions. At 80°C and 80% RH, tablets containing anhydrous lactose have been shown to expand 1.2 times after one day.
    Lactose anhydrous should be stored in a well-closed container in a cool, dry place.
