    D-Isoascorbic acid (D-2,3,5,6-tetrahydroxy-2-hexenoic acid - γ - lactone), also known as erythric acid or isovitamin C, is an English name for Erythrobic acid with a CAS number of 89-65-6. The molecular formula is C6H8O6, with a relative molecular weight of 176.12 [12]. It is an optical isomer of vitamin C and therefore has similar chemical properties to vitamin C, making it a water-soluble antioxidant. D-isoascorbic acid is a white to light yellow crystalline powder or granule. D-isoascorbic acid can participate in human physiological metabolism, but there are different opinions on whether it affects the absorption of L-ascorbic acid [1]; It does not hinder the absorption and utilization of ascorbic acid by the human body, and can be converted into vitamin C in the body [7].
    D-isoascorbic acid is mainly produced as a food additive by fermenting glucose and other raw materials to obtain 2-keto-D-gluconic acid, which is then subjected to esterification, conversion, acidification, refining and other steps. It is quite stable in air when in a dry state, but rapidly deteriorates when exposed to air in solution. According to the National Food Safety Standard for the Use of Food Additives (GB 2760-2011), D-isoascorbic acid and its sodium salt can be used as antioxidants and color protectants in various foods in appropriate amounts according to production needs. Among antioxidant preservatives, sodium isoascorbate is associated with increased total cancer risk and breast cancer risk [11].
