Sodium Bicarbonate: A Versatile pH Buffer and Leavening Agent

    CAS Registry Number: 144-55-8

    Overview

Sodium bicarbonate is the monosodium salt of carbonic acid, with the chemical formula NaHCO₃ and a molecular weight of 84.01 g/mol. It appears as a white, odorless, crystalline powder with a slightly salty, alkaline taste. The compound is commonly known as baking soda, bread soda, or sodium hydrogen carbonate.

    Key Properties

Sodium bicarbonate is moderately soluble in water, with a solubility of approximately 9 g per 100 g of water at 20°C. A 0.1 M aqueous solution has a pH of approximately 8.3. The compound begins to decompose around 50°C, losing carbon dioxide, and converts fully to sodium carbonate at approximately 100°C. It is stable in dry air but slowly decomposes in moist air.

    Major Applications

    Food Industry

Sodium bicarbonate is widely used as a leavening agent in baked goods, reacting with acidic components to release carbon dioxide gas that causes dough to rise. It is also used in effervescent beverages and dry-mix drinks to produce carbonation when water is added.

    Pharmaceutical and Medical Uses

In clinical settings, sodium bicarbonate is administered intravenously as an electrolyte replenisher and systemic alkalizer for the treatment of metabolic acidosis. Indications include severe renal disease, uncontrolled diabetes, cardiac arrest, and severe dehydration. It is also used as an antacid and as a component of oral rehydration salts.

    Other Industrial Applications

Sodium bicarbonate serves as a buffering agent in pharmaceutical formulations, a cleaning agent in industrial applications, an ingredient in fire extinguishers, and an additive in drilling fluids for cement control in oil and gas production.

    Safety and Handling

    Health Hazards

Sodium bicarbonate has low toxicity. The oral LD₅₀ in rabbits is reported at 4,220 mg/kg. It is classified as an irritant, with hazard statement H319 for causing serious eye irritation. Acute effects in humans may include metabolic acidosis, nausea, vomiting, and electrolyte changes at high doses.

    Contraindications and Precautions

Solutions containing sodium ions should be used with caution in patients with congestive heart failure, severe renal insufficiency, or conditions with edema and sodium retention. Rapid intravenous injection in neonates and children under two years of age may cause hypernatremia and potential intracranial hemorrhage; administration rate should be limited to no more than 8 mEq/kg/day.

    Storage

Store in sealed containers in a cool, dry location. Protect from moisture and incompatible materials including acids and acidic salts, with which it reacts exothermically to generate carbon dioxide gas.
