It is made by heating 2-hexenoic acid and methanol in chloroform in the presence of concentrated sulfuric acid to boil and then using anhydrous magnesium sulfate to remove water from the steam. It is derived from the reaction of 3-chloropropionic acid methyl ester and anhydrous sodium acetate in acetic acid.
GB 2760-1996 stipulates that it is temporarily allowed to use food spices.
