Buff to cream-colored powder; acrid odor. Very hygroscopic. Partially soluble in water; insoluble in organic solvents.
A sulfhydryl proteinase with cysteine at the active site from ficus latex. Preferential cleavage is at tyrosine and phenylalanine residues. EC 3.4.22.3.

Ficin Use and Manufacturing
The latex of the fig tree (Ficus sp.) and the milk of immature fruit were extracted with pH 4.0 water, and salted out with ammonium sulfate (secondary) in the presence of ethylenediaminetetraacetic acid (EDTA) and reused The salt is salted out twice. The yield is about 11%. A green fig weighing 10-15g may contain 100-150mg commercial fig protease. After drying in the sun, it has only about 12% viability, and the dried fruit at 100°C is inactive.
