Description
Enocyanin is an anthocyanin extracted from grapes. Enocyanin shows inhibitory effect on the leucine aminopeptidase, acid phosphatase, γ-glutamyl transpeptidase and esterase activity[1].
Red to dark purple liquid, lump, powder or paste, with a slight odor. Soluble in water, ethanol, propylene glycol, insoluble in oil.
ChEBI: Flavylium is a member of the class of chromenyliums that is chromenylium with a phenyl substituent at position 2. It is functionally related to a chromenylium.
Enocyanin Use and Manufacturing
Vitis vinifera, V. labrusca and other grape fruit peels (residues after the production of grape juice or wine) are removed from the seeds, the peels are extracted with water, and then refined and vacuum concentrated. Powdered products use maltodextrin, modified starch or colloids as carriers.
Colorant (red to magenta). For beverages, cold drinks, alcoholic beverages, cakes, jams, etc. The dosage of beverage, wine, jam and liquid products is 0.1%～0.3%. The added amount of powder food is 0.05% to 0.2%. Ice cream is 0.002%～0.2%.
