Chemical Properties	Red to dark purple liquid, lump, powder or paste, with a slight odor. Soluble in water, insoluble in oil.
Uses	Enocyanin can be used as colorant (red to magenta) for beverages, cold drinks, alcoholic beverages, cakes, jams, etc.
