The United Nations Food and Agriculture Organization has released a strategy to control E. coli in meat and dairy products
On October 17, 2022, the Food and Agriculture Organization of the United Nations (FAO) released the control strategy for Escherichia coli (SETC) in meat and dairy products. The main contents include background and methods, beef and dairy products STEC primary production control strategy, beef STEC processing control strategy, related assessment methods overview, butter STEC processing and post-processing control strategy, other animal species STEC primary production and processing control strategy and conclusions. This work aims to support the CODEX Committee on Food Hygiene (CCFH) in the development of STEC management guidelines for beef, butter, and crude cheese.
