EU Assesses Safety of Phosphodiesterase I Enzyme: A Breakthrough in Food Processing
In a significant development, the European Union (EU) has conducted a comprehensive safety evaluation of a food enzyme known as phosphodiesterase I. This enzyme, produced by the non-genetically modified Leptographium procerum strain FDA, holds immense potential for enhancing the processing of yeast and yeast products. The EU's assessment, released by the European Food Safety Authority, sheds light on the safety aspects associated with the enzyme's application in the food industry.
The food enzyme phosphodiesterase I, also referred to as oligonucleotide 5'-nucleotidohydrolase (EC 3.1.4.1), has garnered attention due to its remarkable properties and potential applications. Produced by DSM Food Specialties B.V., the enzyme is devoid of viable cells of the production organism, ensuring its safety during use.
The EU's evaluation encompassed various aspects to ascertain the enzyme's safety profile. Genotoxicity tests conducted on the enzyme did not indicate any safety concerns. Moreover, a comprehensive repeated dose 90-day oral toxicity study in rats revealed a no observed adverse effect level of 1000 mg TOS/kg bw per day, the highest dose tested. When compared with the estimated dietary exposure in European populations, this resulted in a significant margin of exposure of at least 5848, further supporting the enzyme's safety.
To assess the potential allergenicity of the food enzyme, a thorough search for similarity in amino acid sequences with known allergens was conducted. The results showed no significant matches, suggesting a low likelihood of allergic reactions through dietary exposure.
The EU's expert panel acknowledged a minimal risk of allergic reactions through diet but deemed it to be improbable. Based on the provided data and the comprehensive evaluation, the panel concluded that the use of this food enzyme under intended conditions does not give rise to safety concerns.
