Sodium alginate, also known as alginate, is a polysaccharide extracted from brown algae like kelp and sargassum. It serves as a safe food additive and a key ingredient in both food and health products. Widely used as a stabilizer and thickener, sodium alginate improves the texture of baked goods, fillings, sauces, and milk chocolate while preventing large ice crystals in stored ice cream. It also plays a role in producing gel-based foods such as instant puddings, artificial caviar, and jellies, as well as stabilizing fresh juice and beer foam.


Due to its natural dietary fiber properties and compatibility with other gelling agents like gelatin and carrageenan, sodium alginate has become one of the most widely produced and sold food gums globally. When used in blended systems, it significantly enhances performance and cost-effectiveness.


Researchers have explored multiple dimensions of sodium alginate blends:

  1. Gel strength: Studies show that blending sodium alginate with konjac gum (4% addition) can increase gel strength by 330%, while guar gum (4%) and carrageenan (5%) improve it by 220% and 200%, respectively.

  2. Gel elasticity: Gel elasticity can improve via blends with gelatin and xanthan gum, with gelatin showing the most substantial effects.

  3. Gel hardness: Pairing sodium alginate with chitosan improved gel hardness by up to 100 times, while blends with low-ester pectin and carrageenan also showed significant results.

  4. Water retention: Adding xanthan gum (0.25%-0.75%) slightly enhances water retention, while glycerol boosts it further, although excessive glycerol can reduce gel elasticity and strength.


With growing recognition of its versatile applications, sodium alginate continues to be a critical ingredient in the global food industry.
