How to test for sucrose and its uses

How to test for sucrose can be a tricky thing, as many substances can release sucrose when they're broken down. Sucrose is a sugar that is most often found in honey, maple syrup, and fruit juices. To avoid potential problems in your experiment, you can test for sucrose very easily with the following steps:

1) Obtain a dish of cold water.

This dish should be large enough to hold your sample of whatever it is you're testing for sucrose.

2) Get a small container, and fill it with matchsticks.

These matchsticks need to be uniform in size so that they all have the same amount of surface area exposed. For instance, if you use larger matches, the more surface area that will be exposed to the water and therefore potentially release sucrose.

3) Place 5-10 drops of your sample on the matchsticks at one time.

The sample should be small enough to fit on all of the matchsticks, but not so small that it will dry out your sample and make it unusable.

4) Place the dish of water inside a bottle cap, and seal the bottle cap (so that no air can escape).

5) Shake the bottle of water in a room with no windows or cracks in the wall. Do not open the bottle, and keep looking at your test dish to see if it has reacted.

The room needs to be dark so that the water does not evaporate. The lack of light will prevent you from seeing any foam that might form.

6) After about 5 minutes, check on your sample.

If sucrose has been released by your sample, then it should be visible as a white substance on top of the matchsticks and inside of the dish.

7) If you do not see any reaction, then repeat steps 4-6 until you have a successful test.

What you've done is essentially put your sample in a pressure cooker, and since sucrose is a sugar, it will react when in the presence of heat. If no sucrose was released, then repeat the steps again. This reaction only takes place between sodium hydroxide and sucrose. These steps explains how to test for sucrose

Uses of Sucrose

1. It is a food additive in many countries.

But now, it is possible to extract the sugar from many common foods in the body (including sugarcane, honey and maple syrup), and then test for its presence using electrical detectors.

7. It is used in cigarettes.

At least one brand of cigarette uses a special "filter" which contains glycerol, a substance that breaks down very easily when exposed to heat and also releases large amounts of sucrose when burned.
