Scientific experiments found that fried food will aggravate intestinal disease

Crispy fried food is popular all over the world. But researchers in the United States recently wrote in the Journal of cancer prevention research, mouse experiments show that fried food can aggravate the condition of colitis and colon cancer and other intestinal diseases, so people with intestinal diseases or at high risk of intestinal diseases should eat less fried food. In the latest study, researchers from the University of Massachusetts at Amherst added a mixture of frying oil and fresh vegetable oil to the food of one group of mice, while only fresh vegetable oil was added to the food of the control group of mice. The results showed that the colitis of mice fed with the mixed oil showed signs of aggravation, and the intestinal tumor was twice as large as that of the control group; moreover, the intestinal barrier function was damaged, resulting in lipopolysaccharide and bacteria entering the blood circulation from the intestinal tract, and aggravating the symptoms of tissue inflammation.

  

In the process of frying edible oil, the oil is continuously reused under high temperature, and there are oxidation, polymerization, cracking and hydrolysis reactions. The compounds such as carbonyl, ketone and aldehyde are more polar than normal vegetable oil molecules, so they are called polar compounds. According to the researchers, these polar compounds are the "culprit" for the aggravation of intestinal disease in mice. To test this hypothesis, they isolated polar compounds from frying oil and fed them to mice. The results showed that the deterioration of enteropathy in these mice was similar to that in mice fed with frying oil, which showed that polar compounds played a key role in the inflammatory response. However, they also stressed that the results of this study do not mean that eating fried food or frying oil will cause cancer, but remind people with intestinal problems that eating fried food will worsen the condition of enteritis, colorectal cancer and other intestinal diseases, so people with intestinal diseases or high-risk groups should eat less fried food.
