Application:
DMDC is widely used in fruit juice and its technology is relatively mature. The bactericidal effect of DMDC in fruit juice is affected by the type of juice and bacteria, and the combination of DMDC and other sterilization technologies can greatly improve the sterilization effect.
DMDC can penetrate cell membranes and interact with enzymes in microorganisms to block metabolism, thereby achieving a bactericidal effect. Even at a very low concentration, DMDC can effectively kill typical beverage spoilage bacteria without affecting the taste, flavor and color of the beverage. In addition, DMDC can be quickly and completely hydrolyzed into a small amount of carbon dioxide in the beverage. This is also a natural ingredient in juice.
