    Sugar Esters E473, CAS No.37318-31-3 , commonly known as Sucrose esters of fatty acd, manufacturing process by esterifying sucrose with fatty acd. By varying the degree of esterification of the sucrose molecule it is possible to obtain emulsifiers with HLB values ranging from 1 up to 16.  It is a light yellow powder, a non-ionic surfactant and is used as an emulsifier in dairy products, baked goods, soft drnks, jelly, cake and candy. Sucrose Fatty Acd Esters are a mixture of mono-, di-, and tri-esters of sucrose with fatty acd derived from edible vegetable or hydrogenated vegetable oils and fats.
