      Product Detail  


    L - Hydroxyproline, with the chemical formula  C5​H9​NO3​  and a molecular weight of 131.13, has a CAS number of 51 - 35 - 4. It is a non - standard protein amino acid. In nature, it mainly exists in proteins such as collagen. It is one of the key components of collagen, accounting for about 13.4% in normal collagen, while it is absent in most other proteins.


    Physical Properties: It appears as white flaky crystals or crystalline powder. It has a unique sweet taste amidst bitterness, which enables it to improve the flavor of fruit juice beverages, soft drinks, etc. Its melting point is 274 °C (decomposition). It is readily soluble in water (with a solubility of 36.1% at 25 °C) . Its density is approximately 1.3121, vapor density is 4.5 (compared to air), refractive index is - 75.5 ° (C = 4, H2​O ), acid dissociation constants (pKa) are 1.82 and 9.66 (at 25 °C), pH value ranges from 5.5 to 6.5 (50g/l,  H2​O , 20 °C), and its optical rotation is  (α)25​/D75.6° , c = 1 in  H2​O .


    Production Methods: It is usually obtained from proteins such as gelatin, ossein, casein, and soybean epidermis. These proteins are hydrolyzed, and then the imino acid is extracted by the nitrosation method, followed by purification and crystallization through resin chromatography, with a yield of about 7.0%. Additionally, it can also be produced by microbial enzymatic methods. For example, microorganisms that produce proline trans - 4 - and cis - 3 - hydroxylases can be used for the industrial production of trans - 4 - and cis - 3 - hydroxy - L - proline.
