Pyruvic Acid, with the molecular formula C3H4O3 and the simplified structural formula CH3COCOOH, formerly known as Brenztr aubensure, is one of the intermediate products involved in the basic metabolism of the entire organism. The color darkens in the air. When heated, it slowly polymerizes, is highly reactive, and easily reacts with nitrides, aldehydes, halides, phosphides, etc. It participates in the biochemical synthesis and metabolism of sugars, colloids, amino acids, proteins, and alcohol fermentation in organisms. Acetoacetate can achieve interconversion between sugars, fats, and amino acids in the body through the acetyl CoA and tricarboxylic acid cycles, thus playing an important pivotal role in the metabolic linkage of the three major nutrients.
