Potassium pyrophosphate, obtained from the melting of dipotassium hydrogen phosphate and the loss of water molecules, is a white crystalline powder or particle at room temperature, has a strong hygroscopic property in the air, easily soluble in water, but not soluble in ethanol, the aqueous solution is alkaline, has the effect of inhibiting food corruption and fermentation.

Solubility: soluble in water, insoluble in ethanol. Water solution is Alkaline. Solubility is 187g in 100g water (25ºC).
