Maltodextrin belongs to carbohydrates and is a food additive that, when added in moderation, will not cause harm to the human body. For example, in some probiotic preparations, maltodextrin acts as a carrier because the volume of bacteria is very small. Without a carrier, it is impossible to carry these bacteria, and their characteristics may also be unstable.

Applications

Maltodextrin is used in various foods due to its mild taste, low sweetness, and weak hygroscopicity. For example, maltodextrin can be used as a filler, carrier, flavor enhancer, moisturizer, dispersant, film-forming agent, encapsulating agent, etc. It belongs to low molecular weight carbohydrates and is easily digested and absorbed by the human body. It is very suitable for infants, elderly people, and those with weak gastrointestinal function and poor digestion and absorption to consume and supplement energy in moderation. However, maltodextrin belongs to small molecular sugar, and its blood sugar rises rapidly, which is not conducive to the stability of blood sugar and is not suitable for large consumption, especially for diabetes patients. In addition, maltodextrin has low vitamin and mineral content and is not suitable for consumption alone. It can be consumed together with meat, vegetables, and other foods to slow down the rate of blood sugar rise.

Production

After the 1960s, with the use of enzyme preparations in the starch sugar industry, the acid enzyme method was gradually replaced by the double enzyme method and became the main process for producing maltodextrin in various countries. In the dual enzyme method, the first step is to adjust the starch slurry and gelatinize it, then use liquefying enzymes to reduce the viscosity of the starch and preliminarily hydrolyze it into dextrin and oligosaccharides, and finally use glucose amylase and isomerase enzymes to hydrolyze it to obtain different products. The dual enzyme method has many advantages, such as mild reaction conditions, minimal damage to equipment, fewer by-products, and high product purity. At present, the main raw material for maltodextrin is still rice starch.
