1. Physical Properties
(1) Appearance: White granules or crystalline powder at room temperature; absorbs moisture when exposed to air.
(2) Solubility: Highly soluble in water, with a solubility of up to 63 g/100 mL at 20°C; slightly soluble in ethanol; soluble in solvents such as glycerol and methanol.
(3) Basic Parameters: Density is 1.44 g/cm³; melting point is approximately 436°C; flash point is 111.4°C; aqueous solutions are slightly alkaline.

2. Chemical Properties
(1) Acidity/Alkalinity: When dissolved in water, the aqueous solution is weakly alkaline with a pH of approximately 8; it completely loses its preservative and antibacterial effects in alkaline media.
(2) Reactivity: It precipitates benzoic acid upon contact with strong acids and reacts with carbonates to produce carbon dioxide bubbles; in acidic environments, it can be converted to benzoic acid, which is the primary mechanism through which it exerts its preservative effect.

3. Main Applications
(1) Food Industry
As a mainstream acidic preservative, it exhibits optimal antibacterial efficacy in a pH range of 2.5–4.0. It is widely used in acidic foods such as carbonated beverages, fruit juices, soy sauce, pickled vegetables, and jams to inhibit the growth of bacteria, molds, and yeasts, thereby extending product shelf life while preventing flavor deterioration. Permitted addition levels must comply with regulatory standards.
(2) Pharmaceutical Industry
As an excipient in liquid formulations, it is used in products such as syrups, oral solutions, and eye drops to prevent microbial contamination and spoilage. It can also be combined with caffeine to produce “Annaica,” which is used to alleviate central nervous system depression and may assist in the treatment of certain metabolic disorders; relevant dosage must comply with standards.
(3) Household Chemicals and Personal Care Industry
Added to products such as toothpaste, shampoo, and skincare products as a preservative to inhibit microbial growth. The typical concentration is below 0.5%, and it is often combined with potassium sorbate to broaden the antimicrobial spectrum.
(4) Industrial Sector
Used as a metal corrosion inhibitor and rust inhibitor to protect iron-containing metal components; it can also serve as a dye intermediate, a mold inhibitor in coatings and latex, and is used in applications such as plasticizers and the organic synthesis of fragrances. In these applications, only industrial-grade sodium benzoate may be used; it must not come into contact with products intended for human use.
