Synthetic Process
Citric acid monohydrate is produced industrially by fermentation of carbohydrates using Aspergillus niger, followed by separation, purification, and crystallization from cold concentrated aqueous solution.

Mechanism of Action
As a tricarboxylic acid, citric acid monohydrate functions as a proton donor (acidulant) and a chelating agent that complexes metal ions. Its chelating action is utilized in cleaning applications and as an antioxidant synergist.
