Description

A mixture of 50% glucose and 50% fructose obtained by the hydrolysis of sucrose. It absorbs water readily and is usually handled only as a syrup. Because of its fructose content, invert sugar is levorotatory in solution and sweeter than sucrose. Invert su

Safety Information

SRP: At the time of review, criteria for land treatment or burial (sanitary landfill) disposal practices are subject to significant revision. Prior to implementing land disposal of waste residue (including waste sludge), consult with environmental regulatory agencies for guidance on acceptable disposal practices.

Substance added directly to human food affirmed as generally recognized as safe (GRAS).

Toxicity

Cane juice contains ca 5-10 wt% invert sugar (based on sucrose), whereas in healthy beet sugar it is 1%

Drug Information

Cariogenic Agents|SOLN CONTAINING 25% TO 50% DEXTROSE ARE USED IN PARENTERAL HYPERALIMENTATION. Invert sugar Use and Manufacturing

Methods of Manufacturing

Acid hydrolysis of sucrose: take 65% sucrose solution as raw material, add dilute hydrochloric acid to 0.25%, after acting at 52℃ for 1h, neutralize with sodium bicarbonate. Invertase is used to convert sucrose at a pH of 3 to 4. The conversion rate of sucrose can reach 96%.

Uses

Sweetener; Humectant. It is widely used in a variety of foods, especially candy (to prevent hair sand), cakes (moisturizing), etc. It is also a raw material for brewing.
