Methods of Manufacturing

The female cochineal (Dactylopius coccus) is extracted with water, dilute alcohol solution or alcohol, and aluminum hydroxide is added to the extract, which is obtained by precipitation. The molecular ratio of aluminum to carmine acid is 1:2. It needs to be pasteurized or other treatments before being used in food to eliminate all Salmonella bacteria.

Uses

Edible red pigment. According to Japanese regulations, it can be used in tomato sauce, wine, candy, strawberry jam, beverages, cold drinks, sausages, pastries, etc.
