D-Tartaric acid Use and Manufacturing
Tartaric acid is mainly present in the fruits of various plants in the form of potassium salts, and also exists in a small amount in the free state. Glucose fermentation is commonly used in industry to produce dextrotartaric acid; the racemate can be prepared by oxidation of fumaric acid with potassium permanganate; the meso form can be prepared by oxidation of maleic acid with potassium permanganate; L-vinic acid can be obtained by resolution of racemate. In the practical application field of tartaric acid, dextrotartaric acid or its double salt is mainly used. The tartaric acid, a by-product of brewing grapes, is currently the main raw material for the actual production of tartaric acid, and the tartaric acid produced is all dextran.
Tartaric acid is widely used as an acidulant in beverages and other foods, and its use is similar to citric acid.
