Solubility of benzoic acid and sodium benzoate in water is a process of solubility measurement. When a chemical compound is soluble in a defined solvent, it means that the compound has been dissolved in the solution. For example, benzoic acid and sodium benzoate are dissolved in water.

3. Benzoic acid has the pH value between 5.0 to 9.0 according to the pH scale used by chemists which ranges from 0 to 14. The lower the number on its axis; more acidic it is.
4. Benzoic acid can be used as a food additive and it is added to food items as an antioxidant or preservative.
5. Benzoic acid is used as a preservative in mouthwashes, toothpaste, soaps, toothbrushes and even medicines. Present in carbonated beverages, benzoic acid is also used in other countries to give them the characteristic flavor of wine. The beverage companies add benzoic acid to the beverages because it does not alter the flavor of the drink and gives it a more flavorful taste than that of ordinary sugar water. Benzoic acid is also added to ketchup and various foods during processing for preservation.
Properties of sodium benzoate
1. Sodium benzoate or sodium xylenolactate is an organic compound and belongs to the class of compounds called phenols and carboxylic acids. It is used as a food additive and preservative and it is also used in soft drinks, jams, jellies and fruit drinks for preservation purpose according to United States regulations.
2. Sodium benzoate is slightly soluble in water but it can be dissolved in polar organic solvents such as ethanol, methanol, acetonitrile, acetone etc with a slight color change.
3. Sodium benzoate is soluble in neutral to alkaline solutions.
4. Sugar and sodium benzoate react by creating a syrupy solution which has a sweet taste and it can also be used in the soft drinks as a blending agent. The sodium benzoate acts as a preservative for soft drinks and fruit juices because it keeps insects from breeding in the bottles. It does not however prevent microorganisms from growing on or inside the bottles of soft drinks during their storage period.
5. Sodium benzoate can be found in tomato ketchup, chocolate candy products, gum, mints, chewing gums, prescription drugs etc. It can also be used in fruit ciders and fizzy drinks as a flavoring agent.
6. Sodium benzoate is an antibacterial and it is also an enzyme inhibitor which means that it can kill microorganisms that may cause diseases including cancer. It also acts as an antioxidant by preventing the growth of harmful organisms in the food products. However, sodium benzoate is not considered a preservative, since it does not inhibit microbial growth even at high concentrations. The Food and Drug Administration therefore does not allow its use under the name of "preservative".
7. Sodium benzoate has also been found to be a possible cause of non-allergic reactions like contact dermatitis which is an allergic reaction of the skin to chemicals.
Uses of sodium benzoate
1. Sodium benzoate is a preservative used in soft drinks. It keeps the pH level of soft drinks at 4-5 instead of 4.7 which makes it safer for consumption by the children.
2. Sodium benzoate is used as a food additive and preservative and it is also used in various household products such as shampoos, canned fruit, jams and jellies etc.
3. Sodium benzoate can be found in tomato ketchup, chocolate candy products, gum, mints, chewing gums ,prescription drugs and other medical purposes.
4. It is also used as a flavoring agent in fruit ciders and fizzy drinks.
