Last week, Dunfermline, Scotland, witnessed an intense spectacle of peer scrutiny, where 50 judges rigorously evaluated 478 entries from 78 of Scotland's finest butchers, bakers, and pie makers as part of the World Championship Scotch Pie Awards. This annual competition, organized by Scottish Bakers, serves as a celebration of the remarkable skills demonstrated by the country's pie artisans.

The esteemed title of World Champion awaits the victor in the Scotch Pie category, along with other coveted Best in Category awards. The grand announcement is slated for January 16, 2024, at the Westerwood Hotel in Cumbernauld, to be presented by TV celebrity Carol Smillie.


Lesley Cameron, the recently appointed CEO of Scottish Bakers, highlighted the diverse expertise among the 50 judges, representing the bakery and butchery sectors, as well as ingredient suppliers. The competition, now in its 24th year, aims to spotlight the exceptional talents showcased by Scotland's pie makers on a daily basis.


For newcomers like myself, tasked with judging, the initial quest was to grasp the essence of a Scotch pie. Scotland, often poetically referred to as Caledonia, renowned for its oats and oatcakes since the 8th century, has a rich culinary history. Garry Croy, UK business development manager for Andrew Ingredients, emphasized the fundamental elements of the pie shell—basic ingredients like flour, water, shortening (formerly lard), and a touch of salt. The meticulous process of hand or machine pressing, followed by curing, results in a crispy, robust shell that encapsulates the filling without compromise.

Despite being colloquially labeled the 'humble Scots pie,' this culinary marvel serves as an excellent canvas for various meaty and vegetarian concoctions. Gordon Newlands, brand development manager for Quality Meat Scotland, highlighted the importance of the special crust and a well-balanced, well-seasoned filling, varying across different regions of Scotland.


Suzie Finlay, regional sales manager for Bako Northern Scotland, fondly associated the Scotch pie with nostalgia, encapsulating the essence of childhood Saturdays—a visit to the baker for a pie while dad tinkers in the garage. Simon Taylor, GM of Rondo, dubbed it the football pie due to its popularity among fans before or after a game.


The competition has evolved to encompass diverse categories, reflecting the adaptability of High Street bakers and butchers to contemporary trends. Beyond the traditional Scotch Pie, new categories include Football Pies & Savouries, Macaroni Pie, Steak Pie, Sausage Roll, Hot Savoury, Vegetarian Savoury, Haggis Savoury, Bridie, and Apple Pies.


Innovations in the Hot Savoury category, as described by Andrew Ingredients' Garry Croy, showcase the competition's dynamic nature—ranging from fish pies to tatties and neaps pies. Judges, including Harriet Heath, Executive of Reformulation for Health at FDF Scotland, noted the creativity and variety in the vegetarian category.

Joanne Burns, Reformulation for Health manager, expressed a vision for a healthier Scotch pie, exploring possibilities such as reduced sodium in the pie shell or healthier seasoning blends. The prospect of a healthier pie category could unfold in the coming year, reflecting a commitment to traditional products with a contemporary twist.


Lesley Cameron envisions the Scotch pie expanding its global presence, positioning itself as an exported product synonymous with Scotch shortbread and whisky. While acknowledging the modest resources of Scottish Bakers, Cameron emphasizes the critical role of sponsors in elevating the industry's profile.


The competition's partners, including Bako, Carr's Flour, Rondo, Fleming Howden, and Andrew Ingredients, exemplify industry support and commitment. Ross Dea, technical sales manager for Carr's Flour, emphasizes the significance of recognizing the deserving bakers. Alan Leith, technical sales manager for Fleming Howden, underlines the importance of supporting the industry by being involved with Scottish Bakers.


As the Scotch pie continues its flavorful journey, the blend of tradition and innovation promises to captivate palates worldwide. The competition, far from static, mirrors the evolving tastes and preferences of consumers while staying true to the essence of this culinary masterpiece.
