Chinese Innovation Team Unveils Breakthrough Nitrite Detection Kit for Meat Products

In a pioneering effort, the Chinese Food Processing and Equipment Innovation Team has developed a cutting-edge rapid detection kit specifically designed to measure nitrite content in meat products. Nitrite, a naturally occurring nitrogen compound, serves as a crucial indicator for evaluating water quality and safety and is widely utilized in meat processing as a preservative and color-protecting agent. However, excessive nitrite intake poses severe health risks, including the potential for chronic diseases and cancer, necessitating a reliable and swift detection method.


The study introduces a novel ratiometric fluorescent nanoprobe, coupled with a synchronous fluorescence method, as an efficient means of detecting nitrite in food. By focusing on commonly available meat products, the method involves the interaction of nitrite in the sample with amino groups on the nanoprobe's surface, forming a diazonium salt. This reaction results in the quenching of blue fluorescence, providing a direct reflection of nitrite concentration in the sample. Notably, experimental results reveal a robust linear relationship between nitrite concentration and fluorescence intensity ratio, with a remarkable detection limit as low as 0.021 μM.


Taking the innovation a step further, the study introduces a portable nitrite hydrogel detection kit for on-site dual-mode detection of nitrite in samples. This kit seamlessly integrates with smartphones, enabling dual-mode colorimetric analysis and fluorescence detection simultaneously (both in daylight and ultraviolet light). The captured test results are then converted into digital information through ImageJ software, facilitating visual fluorescence detection within a specific nitrite concentration range (0.1-1.5 mM) for quantitative analysis.


Published in the prestigious "Journal of Hazardous Materials" (JCR Area 1, IF=13.6), the research is co-correspondingly authored by Researcher Zhang Chunhui and Senior Engineer Liu Huan from the Beijing Academy of Agricultural and Forestry Sciences, with Deng Siyang, a doctoral student jointly trained by China and Belgium, serving as the first author. Supported by the National Key R&D Program Project (2021YFD2100103) and the Beijing Science and Technology Planning Project (Grant Number: Z221100007122010), this groundbreaking study offers a fast, efficient method for nitrite concentration detection in meat products, advancing the prospects of on-site real-time monitoring in food safety assessments. The research aims to provide forward-looking technical support in addressing critical issues related to food safety and environmental concerns.
