The regulations cover various cephalopod products, including fresh, refrigerated, frozen, thawed, cooked, and tenderized cephalopods such as squid, octopus, and cuttlefish.

The regulations establish specific requirements for product sensory attributes and quality. These include parameters such as color, odor, texture, and taste, which must meet designated standards to ensure consumer satisfaction.

3. Processing Guidelines:
The regulations outline processing guidelines for cephalopod products. For instance, cooked cephalopods should undergo heat treatment to achieve an internal temperature between 65-70°C. Frozen products should have ice content not exceeding 12% of the net weight indicated on the packaging. During the thawing process, the temperature must not exceed 4°C, and the water temperature during defrosting should not exceed 18°C.

4. Microbiological and Physicochemical Standards:
The regulations define microbiological and physicochemical standards that cephalopod products must meet. For example, the total volatile basic nitrogen content should be below 30mg/100g, indicating the freshness and quality of the product.

5. Labeling Requirements:
Cephalopod products must adhere to specific labeling requirements. In addition to the sales name, the labels should also include information about the species' scientific name and its origin.

 

With the implementation of these new regulations, Brazil aims to ensure the production and sale of high-quality cephalopod products that meet the expectations of consumers.
