Sodium benzoate, on the other hand, has wide-spectrum antimicrobial activity by acting as a bacteriostat and inhibitor of mold and yeast growth. The result showed that the addition of sodium benzoate to soymilk effectively lowered the total viable count (TVC) and total coliform count (TCC), making soymilk microbiologically safe.
For example, it was noticed that samples of soya milk treated with citric acid and sodium benzoate remained fresh for 7 days at room temperature while the control sample spoilt very quickly.
It proved this not only improved the preservative effect but can also downsize the usage of a single preservative to a certain extent, thereby lessening the detriments of preservatives on the food taste and nutritional value.
