This product is like white or milky yellow freeze-dried powder, soluble in water. It can be made from Aspergillus oryzae in powder or fatty form. The main ingredient is an enzyme that breaks down fat. Its basic function is to hydrolyze the triglyceride into glycerol and fatty acids. It can only act in heterogeneous systems, that is, at the interface of oil and water, and has no effect on uniformly dispersed or water-soluble substrates, and even if it has an effect, it is extremely slow.
Purpose:
It can be used as enzyme preparation. It is mainly used in cheese manufacturing (degreasing and making the product produce a special flavor, the highest amount of lOOmg/kg), lipid modification, lipid hydrolysis to prevent the deterioration of fats in some dairy products and chocolate. It is an excellent preparation that makes milk chocolate and cream cake produce special flavor. It is added to the egg white to break down fat that may be mixed in, thereby increasing its foaming capacity. The addition of lipase in wine brewing can promote the fermentation of wine and increase the flavor of wine.

Preparation:
Made from pig pancreas. 365g pancreatic lipase was prepared from 3kg pig pancreas after being minced and deester by trichloromethane and butanol twice, then extracted by ethanol and freeze-dried.
