Gamma-decalactone is a gamma-lactone that is oxolan-2-one substituted by a hexyl group at position 5. It has a role as a flavouring agent, a food additive and an anticonvulsant. It is a gamma-lactone and a tetrahydrofuranone.

γ-Decalactone Use and Manufacturing

Methods of Manufacturing

It is formed by heating and cyclizing 9-decenoic acid (or ω-undecylenic acid) and 80% sulfuric acid at 90℃ for a long time. Using Y-1γ-decanolactone yeast (selected by Tianjin Institute of Light Industry in 2000) for biological preparation in the following nutrient base: peptone 3.5g/L; yeast extract 2.5g/L; KH2PO40.5g/L; Na2HPO4 1.2g/L; MgSO4?7H2O 2.4g/L; castor oil 4%, antifoaming agent 0.4%, starting with Ph 7.0, and finally γ-decanolactone in the fermentation broth can reach 400mg/L.

Used to formulate fruit-flavored essence, feed flavoring agent, etc.
