Methods of Manufacturing

Whey obtained from cheese preparation is heated and solidified at a pH of 4.5 and a temperature of 85 to 105°C. 0.1% ammonia water is added to the coagulated product, and yeast strains (such as Saccharomyces fragilis) are inserted at 30°C Cultivate under aeration, collect the yeast, wash it with warm water, and cool it rapidly at -18°C to inactivate other enzymes contained in it, and then treat it with 1.5 to 3.0 times the amount of yeast.

Uses

β-galactosidase was used in the production of a stabilized, single reagent for alcohol analysis.
