DuPont launched a series of strains to reshape the fermented dairy industry
DuPont Nutrition and Biotechnology recently announced the launch of the latest series of dairy product strains and probiotic formulas to provide yogurt manufacturers with new solutions to achieve today's differentiation and target future growth. These new strains can give a faster fermentation speed and a higher number of viable probiotics, while maintaining the mild taste and luxurious texture that consumers like.
The new strains are:
YO-MIX® PRIME
The YO-MIX® PRIME strain enables manufacturers to create a particularly mild taste and high-quality cream texture for consumers.
The strain also helps to reduce the amount of sugar added, maintain a high number of viable probiotics, while maintaining quality in challenging distribution channels. It also helps manufacturers reduce the amount of protein added, saves formulation costs, and improves processing flexibility due to rapid fermentation and complete control of the acid before cooling and filling.
The YO-MIX® PRIME 900 strain especially enables producers to fine-tune the texture of yogurt according to consumer preferences.
YO-MIX® FAST 1.0
YO-MIX® FAST 1.0 strain can be fermented quickly, providing a thick and smooth texture, adapting to different yogurt formulations and processes.
The YO-MIX® FAST 1.0 strain was discovered and designed by French scientists, produced in the French Alps, and obtained a Chinese patent with the patent number ZL200910224873.X.
DuPont™ Danisco® LPC 800
DuPont™ Danisco® LPC 800 strain is produced in Germany, which can keep the acidity of refreshing fermented milk beverages until the end of the shelf life is not too high, and maintain a high number of viable lactic acid bacteria. Compared with similar products on the market, it can also speed up fermentation within 24 hours, thereby reducing the risk of infection with bacteria.
DuPont™ Danisco® LPC 800 strain is an ideal choice for low-sugar formulations. Compared with other commercially available strains, it can provide a more stable and refreshing flavor.
HOWARU® Bifido
The combination of HOWARU® Bifido probiotics and YO-MIX® strains can create new opportunities for high-quality probiotic yogurt containing higher doses of probiotics.
