The ability of these sugars to transfer electrons or function as a reducing agent in chemical reactions is referred to as their "reducing" property. Redox (reduction-oxidation) reactions allow reducing sugars to be oxidized while another chemical is reduced.
It's important to remember that not every sugar is a lowering sugar. For instance, sucrose (table sugar) is regarded as a non-reducing sugar since it lacks a free aldehyde or ketone group.
Is Fructose a Reducing Sugar?
Yes, it is considered a reducing sugar because it can be oxidized under a basic aqueous solution by a mild oxidizing agent like Tollen's reagent (capable of oxidizing aldehydes, not alcohol). Although fructose doesn't have an aldehyde group, it can nonetheless degrade chemicals that do.
This is because fructose can be isomerized to different aldoses (glucose and mannose). After all, the reagents are basic solutions.
Since fructose is a ketose sugar, it does not have an aldehyde group but rather a ketone group (-C=O). Fructose can nonetheless go through a process called tautomerization in solution where it can change into an isomeric form that possesses an aldehyde group despite not having one. Fructose can then function as a lowering sugar as a result.
Fructose can decrease and undertake oxidation processes when it tautomerizes to its open-chain form. For instance, fructose can generate a crimson precipitate of copper(I) oxide when it reacts with Benedict's solution or Fehling's solution, both of which contain copper ions. In lab testing, this reaction is frequently employed to find reducing sugars, especially fructose.
