Soy Proteins Show Promise in Preserving Frozen Foods
The unpleasant sight of ice crystals on your favorite ice cream may soon be a thing of the past, thanks to a groundbreaking discovery. In a recent study published in the Journal of Agricultural and Food Chemistry (2023, DOI: 10.1021/acs.jafc.2c08701), researchers have found that soy protein isolate (SPI), a commonly used food additive, could potentially safeguard the texture and flavor of frozen foods.
Tong Wang, a food chemist at the University of Tennessee, Knoxville, and the leader of this research, emphasizes the non-toxic nature of SPI since it's derived from a natural food protein. She states, "If we can confirm its effectiveness in preserving food quality during freezing, it would be a significant advancement."
While previous studies had explored antifreeze properties in peptides derived from gelatin, Wang and her team were determined to find a plant-based alternative. After investigating various plant proteins, they settled on SPI and experimented with multiple variants. Notably, SPI peptides with stronger antifreeze capabilities displayed higher molecular weights and shared similar secondary structures, Wang explains.
Wang's theory revolves around the notion that to prevent freezing in food, molecules must exhibit amphiphilic properties, meaning they must possess both hydrophobic and hydrophilic regions. It is at the water-ice interface that SPI peptides seem to exert their protective influence.
Further research is underway to elucidate the precise chemical interactions responsible for inhibiting ice formation by SPI peptides. Wang also highlights the broad potential applications of SPI peptides due to their natural origin, extending beyond food preservation to areas such as agriculture and road de-icing.
