Innovating Protein Enrichment: Balancing Taste, Texture, and Nutrition in Yoghurt
Consumer interest in protein-enriched products is on the rise, driven by a global focus on healthy eating and functional benefits. Over the last two years, 58% of consumers have increased their protein intake, leading to a 10% Compound Annual Growth Rate (CAGR) in new product launches with protein claims, particularly in the European market, where the trend has seen a remarkable growth of 26%.
The challenge for brands is to stand out in this protein-enriched landscape while maintaining essential taste and texture attributes. The key lies in making careful choices regarding base ingredients to address formulation challenges and align with consumer preferences.
High-protein yoghurt, a staple dairy product, has witnessed steady growth, offering a health-conscious alternative for consumers. The health benefits of yoghurt, combined with innovations in flavor and texture, position it as a permissible and nutritious option for snacking or as part of daily meals.
In Europe, the share of high-protein yoghurt has surged from 13% to 20% in the last five years, driven by a decline in regular yoghurt launches. Nestlé Lindhals, with its range of high-protein yoghurts and puddings, has experienced a notable 35% increase in volume sales in the UK, indicating strong consumer interest in protein-rich products.
Beyond traditional dairy benefits, consumers are turning to yoghurt for its functional advantages, seeking options that promote gut health, memory, and immunity. For example, Want Want Group's launch of drinking yoghurt with lactoferrin exemplifies how brands leverage ingredients with established health benefits to differentiate themselves.
A game-changer in achieving higher protein content is NZMP WPC 515. Recent trials have demonstrated the potential to reach up to 15% protein while maintaining a pleasing taste and texture balance. By adjusting the base formulation, two innovative concepts were developed during the trial, both maintaining the same total protein content.
NZMP WPC 515 offers key features essential for manufacturing challenges: Good dispersibility for optimized ingredient mixing. Excellent heat stability, enabling higher protein levels without compromising texture. Compatibility with MPCs to manipulate fermentation times. Low viscosity, making it suitable for spoonable or drinkable yoghurts.
