In the wake of the recent release of the "Fuzhou City 2023 Freshly Made and Ready-Sold Coffee Comparative Test Result Report," revealing trace amounts of acrylamide in 59 types of coffee, there is a growing need to understand the nuances surrounding this Class 2A carcinogen. To provide clarity on acrylamide, its sources, and preventive measures, the Fujian Provincial Consumer Committee and the Fuzhou Municipal Consumer Committee have offered insights into the chemical compound.

Acrylamide, with the chemical formula C3H5NO, is a white crystalline powder soluble in various solvents. Classified as a Class 2A carcinogen by the World Health Organization, it indicates sufficient evidence of carcinogenicity in animals but inconclusive evidence in humans.
Decoding Class 2A Carcinogens
The International Agency for Research on Cancer categorizes carcinogens into five classes based on their risk to humans. Class 2A carcinogens, including acrylamide, signify limited evidence of carcinogenicity in humans and sufficient evidence in experimental animals.

Acrylamide in food primarily results from the Maillard reaction during high-temperature processes like frying, baking, and roasting.
