This unique product, derived from a fungal strain found in Australian soil, successfully replicates the mouthfeel of animal fat. Plant-based alternative proteins have gained prominence in recent years; however, issues related to flavor and texture have limited their ability to fully compete with traditional meat products.


To create Tastilux, Nourish Ingredients utilized precision fermentation to extract fat-flavor molecules, particularly omega-6 fatty acids, from fungi. This fungal species is already employed in baby formula. The fats undergo a "cooking reaction" to initiate the Maillard reaction, which imparts a charred, grilled meat flavor. Tastilux can be added to uncooked plant-based products and, when cooked, provides an authentic meaty taste.


Tastilux's immediate market is within the business-to-business sector, allowing alternative protein companies to enhance their products with this innovative fat. This groundbreaking product was showcased at SXSW Sydney, providing a glimpse into the future of plant-based foods.
