Can Seaweed Revolutionize Our Diets and Health?
Have you ever wondered why shop-bought ice cream doesn't have ice crystals, or how onion rings maintain a consistent size and taste throughout? The secret lies in seaweed extract, known as alginate, which is derived from sea kelp. Jeffrey Pearson, a molecular physiology professor at Newcastle University, explains that alginate, a natural fiber found in seaweed, is responsible for these culinary wonders.
While seaweed consumption is common in coastal parts of Asia, its use as a food ingredient is gradually gaining recognition as a nutritional and sustainable "superfood" in the West. Parents in the US, for instance, have started substituting fatty snacks with dried seaweed due to its increasing availability. However, it's important to note that highly processed seaweed snacks can be high in salt and other additives, so moderation is key.
Seaweed offers several health benefits, including being low in calories and rich in protein, fiber, and polyphenols, which can help reduce the risk of heart disease, diabetes, and certain cancers. It is also a good source of iodine, which is essential for thyroid function. Recent findings by Pearson indicate that certain species of seaweed, due to their alginate content, can aid in weight control for overweight or obese individuals. Alginate inhibits lipase, an enzyme that aids in fat digestion, reducing fat absorption from the diet by approximately 75%.
To test the effectiveness of various natural fibers, including alginate, Pearson and his team used an artificial gut to measure fat digestion and absorption when consumed with common foods like bread and yogurt. Clinical trials are planned to further explore the weight management benefits of alginate when incorporated into a regular diet, such as being cooked or baked into foods like bread.
Seaweed's potential benefits extend beyond weight loss. Large population studies in Japan have shown a correlation between daily seaweed consumption and lower rates of heart disease and stroke. Consuming between 5g and 10g (dry weight) of seaweed per day can provide nutritional advantages through its fiber and nutrient content.
However, it's essential to consider potential risks associated with seaweed consumption. There are concerns about the presence of arsenic, lead, and high levels of iodine in seaweed. The arsenic content varies depending on the species and the water in which it grows. Therefore, it's crucial to source seaweed from reputable suppliers and consume it in moderation.
Taste preference is another factor to consider. While seaweed extract itself doesn't have a distinct taste, whole seaweed can be an acquired taste. Some people love it, while others can't stand it. Familiarity with certain foods can influence acceptance, and studies have found evidence that seaweed was consumed in ancient Europe, challenging preconceived notions about traditional European diets.
Incorporating seaweed into our diets effectively can be a challenge. Most seaweed available in the UK and Europe is dried, and rehydrating it at home can affect its taste. Chopping up dried seaweed and using it as a seasoning is one suggestion. However, frozen seaweed is not yet widely available in supermarkets, and there is a need for more promotion and education about its benefits.
It's important to note that not all seaweed species are the same. They vary in taste, nutritional composition, and their relation to one another. With over 145 edible species, each with its unique characteristics, it is more accurate to refer to specific seaweeds rather than just "seaweed" as a general term.
As the popularity of seaweed continues to grow, there are still unknowns regarding contamination levels of iodine and arsenic. Regulatory bodies, such as the European Food Safety Authority, are considering these factors to ensure safe consumption.
Despite the complexities surrounding seaweed and its diverse species, its association with numerous health benefits makes it a promising addition to the Western diet. Whether it will become a staple remains to be seen, but it undoubtedly adds a touch of intrigue and healthfulness that can outshine homemade ice cream and revolutionize our approach to nutrition.
