Supplementing Product Shelf-Life Stability Testing Requirements:
The revised guidelines introduce additional requirements for testing the stability of products' shelf life. Specifically, the section related to stability research on Listeria monocytogenes has been expanded to include temperature stability studies during trade and transportation at 7°C and in household refrigerators at 10°C.

 

Reference to ISO Standards for Environmental Sampling:
To ensure comprehensive sampling practices, the revised guidelines now include references to ISO standards for sampling the production environment. Additionally, the sampling guidelines for Listeria monocytogenes have been updated, including the addition of a self-monitoring sample template. Furthermore, Annex 2 specifies changes in the sampling quantity for histamine in fish sauce, with the sample size changing from n=9 to n=1. The sampling frequency is now determined based on annual production volume.
