The advantages of "fast-growing" chickens are that they grow quickly, are quick to market, are large, tender and less expensive, but the disadvantage is that they lose some of their flavour.
Many local chickens are free-range and have a higher flavour and aroma than industrially reared chickens, but they are not as tender as industrially reared chickens.
So, for fast food and takeaways, choose the tender and inexpensive 'instant chicken'; for traditional flavours such as stewed and steamed, go for free-range chicken.
The reason for the short growth cycle of fast-growing chickens is not the use of hormones, as has been suggested, but the result of a combination of modern genetic breeding techniques, modern feed and nutrition techniques and advanced management techniques.

The main purpose of using antibiotics and other drugs in broiler farming is to prevent the occurrence of certain epidemics, and there is no ripening or weight gain effect.
There is basically little difference in nutritional value between quick-cooked chickens and local chickens, and consumers can choose between them in terms of taste and price.
