Crystallized and anhydrous sodium pyrophosphate are rarely used on their own and are generally used in preparation with other condensed phosphates. A mixture of sodium pyrophosphate and sodium polyphosphate used as an elastic enhancer. Sodium pyrophosphate can also be used to make soy sauce, soy sauce color bright, prevent its discoloration. In cooked fish products, the amount of sodium pyrophosphate added is 0.05% ~ 0.3% of raw meat.
