It is obtained from the whole plant of Liliaceae evergreen shrub Yucca (Yucca arborescens and Yucca schidirera), which is produced in the deserts of Mexico and Central and South America, and extracted with hot water or lukewarm water-containing ethanol or water-containing isopropanol.

Uses

Emulsifier; foaming agent; preservative. Mainly used for refreshing drinks, foaming sweets, mixed wine, etc. GB 2760-2000 stipulates the permitted food spices.
