The global shift towards plant-based alternatives has transcended from a trend to a global reality. Consumers are increasingly conscious of environmental impact, health, and animal welfare, propelling food companies to invest in sustainable technologies and explore innovative plant-based alternatives. What was once a niche market has now become mainstream, embraced not only by vegans and vegetarians but also by flexitarians seeking diverse and balanced diets.
Despite the surge in popularity, the plant-based market encounters challenges like gluten, soy, or other allergens in finished products and a lack of vertically integrated supply chains for ingredients. Addressing these challenges is MartinoRossi, an Italian food company specializing in gluten-free, allergen-free, and GMO-free flours, semi-finished products, and functional ingredients from cereals and pulses.
In 2022, BASF procured 1.2 million metric tons of renewable raw materials, emphasizing the transition from fossil to bio-based starting materials to reduce greenhouse gas emissions. MartinoRossi, aligning with this commitment, has expanded its Responsible Sourcing Report to include coconut oil, castor oil, and bio-based active ingredients, ensuring a comprehensive approach to sustainability.
MartinoRossi's Research and Development team has been actively working on creating four new plant-based ingredients from legumes, showcasing the company's dedication to providing innovative solutions for food companies seeking plant-based alternatives.
1. Roasted Pulses Flours (HTS):
- The roasting process elevates the taste of raw materials, imparting a "toasted" flavor to flours and derived products.
- Ideal for unconventional preparations like sweet spreadable creams, cookies, pastry products, baked goods, vegetable creams, and drinks.
- Offers a nutty flavor to the final product, making it suitable for applications requiring a good protein level.
2. Plant-Based Mix for Vegan Mayonnaise from Pulses:
- An allergen-free, clean label mix for producing vegan mayonnaise, 100% gluten-free, egg-free, starch-free, and additives-free.
- Mainly derived from pulses, this dry mix boasts a 12-month shelf-life, low-fat content, and is soy-free.
- Requires a simple and quick manufacturing process, offering high customizability and cost savings.
3. Plant-Based Solutions for Vegan Nuggets:
- Customizable dry powders for food and CPG manufacturers to produce vegan alternative chicken nuggets.
- Totally gluten-, soy-, and GMO-free, providing structure and texture similar to real chicken nuggets.
- Shelf-stable products with at least 12 months of shelf-life, allowing for cost-effective production.
4. Plant-Based Mix for Egg Alternatives from Legumes:
- Versatile and easy-to-use dry mix for preparing egg alternatives suitable for sweet and savory recipes.
- Enables the creation of various products such as scrambled "eggs," omelettes, custard, and pancakes.
- Offers a 12-month shelf-life, with a quick and straightforward production process.
MartinoRossi's commitment to innovation extends beyond these solutions, with ongoing efforts in Research and Development to create more plant-based and allergen-free alternatives. Meet the team at Food Ingredients Europe from November 28 to 30 in Frankfurt, Hall 3.1, Stand J-120, to experience these products and more, including plant-based burgers, veggie balls, veggie bolognese sauce, and much more.
