Peru Sets New Quality Standards for Cheese Production
Peru, a country renowned for its diverse culinary traditions, has recently established comprehensive quality standards for cheese production. The Peruvian National Institute of Quality Research released these standards on April 22, 2024, signaling a commitment to ensuring the safety and excellence of cheese products in the country.
Key Elements of Peru's Cheese Quality Standards:
1. Exclusion of Non-Dairy Ingredients:
According to the newly established standards, cheese must not contain any fats, proteins, or other substances derived from sources other than dairy products. This requirement ensures that cheese remains a pure dairy product, free from any plant or animal-based additives.
2. Appearance and Texture:
Peruvian cheese should showcase specific characteristics in terms of color, smell, flavor, and texture. It should exhibit hues of white, cream, or light yellow, possess a distinctive aroma and taste, and have a compact, firm, and slightly elastic texture.
3. Minimum Fat Content:
The new regulations stipulate that cheese must have a minimum fat content of 45%. This provision ensures that cheese products meet the desired nutritional composition and maintain the desired taste and texture.
4. Storage Temperature:
To uphold the quality and safety of cheese, the storage temperature of the product should not exceed 6°C. This requirement aims to prevent spoilage and maintain the freshness of the cheese throughout its shelf life.
5. Raw Material Specifications:
The raw material used for cheese production must be pasteurized cow's milk, or a blend of whole cow's milk and sheep's milk. By specifying the source of milk, the standards ensure that cheese manufacturers use high-quality and safe raw materials in the production process.
6. Labeling Requirements:
Cheese packaging must prominently display the names and legal addresses of the manufacturer, packager, distributor, and importer, along with the country of origin. These labeling requirements enhance transparency and enable consumers to make informed choices about the cheese they purchase.
Peru's recent establishment of quality standards for cheese production demonstrates the country's commitment to upholding the integrity, safety, and excellence of its cheese products. By setting clear guidelines regarding ingredients, appearance, texture, fat content, storage, and labeling, Peru aims to enhance consumer confidence and promote the growth of its cheese industry.
